My Chicken Cordon Bleu Soup This is a great low carbohydrate one pot recipe, as it matches the flavor of the traditional recipe all wrapped up into a nice warm bowl It's also perfect for meal prepping as well Let's get started For this recipe, we'll be using 8 ounces of Swiss cheese that we'll shred; some precooked chicken; and some diced ham
To a stock pot on medium high heat, add two tablespoons of unsalted butter Add the diced ham and stir and cook until the ham starts to brown a bit This should take about 3 to 5 minutes Add some heavy cream and give a stir Next, add 8 ounces of softened cream cheese
You'll want to mix until the cream cheese is fully melted Add the chicken and give a mix to incorporate Pour in four cups of chicken stock give that a mix to blend We'll season our soup with some poultry seasoning; salt; ground black pepper; and just a bit of cayenne Mix until well blended
Bring the soup to a simmer and cook for about 15 minutes to allow all the flavors to come together After it's cooked a bit, give a taste and adjust for seasoning Now add the shredded Swiss cheese – half at a time Adding the cheese this way will give us a smoother texture Once the cheese is fully melted, give a final stir and serve warm
