Low Carb and Keto Friendly Twice Baked Cauliflower

hello everyone it's Stephanie Manley with copykatcom today i'm going to show you how to make twice baked cauliflower if you've never had twice baked cauliflower it's really made in the spirit of twice baked potatoes so if you're on a low carb or keto diet you know what this recipe is going to be perfect for you or those who have been probably missing some mashed potatoes so let's get started we are gonna begin by steaming a head of cauliflower or about two to two-and-a-half pounds of cauliflower I'll give you the directions for an instant pot 1 cup of water goes in there and then go ahead and add in your cauliflower now if you don't have an instant pot guess what you can use a steamer that you may have on hand or chances are you have a steamer insert in a pot somewhere in your cabinet so grab that and steam the cauliflower so let me walk you through how you turn your instant pot into a steamer first thing you're gonna do is you're gonna turn it on I always hit cancel first and then we're gonna select the steam body then we're gonna adjust the time downward by hitting the minus sign now if you want your final product to be very smooth and creamy 7 minutes if you don't mind a little bit of texture 5 minutes will do do an instant release or the quick release and stop the process of cooking so we have got our cauliflower it's all cooked up now it's time to add in all the mixes we're going to add in a couple tablespoons of melted butter then we're gonna add in 2 tablespoons of sliced green onion tops just the green tops then about 1/4 cup of sliced bacon then we're gonna add in 1 cup of shredded cheese we are also going to add in one cup of sour cream now at this point you want some salt and pepper in there add that in I don't think this needs a lot of salt because sometimes bacon is a little bit salty and your student mix this up until you've got it at the right texture that you like so just you can mix this up for just a moment or two or really turn it into a mashed potato consistency it's up to you so at this time I hope you have started preheating your oven now we're gonna spoon everything into the casserole dish we're gonna top it with cheese and we're gonna bake it till it once-through so that'll take about 20 minutes or so now one alternate recipe for this is to add in a couple tablespoons of cream cheese into this and mixture I don't know if you're following the keto diet you may not want to spend those Carr points on that but it's just a slight variation I think it is just a little bit more flavorful but that's my personal opinion okay so we're gonna top it with 1 cup of shredded cheese like I said and then we're gonna put it in the oven and we're gonna bake it for about 20 to 25 minutes we just wanted to heat the room and when you take it out of the oven you can garnish it with a few more bacon slices and some fresh chives or chopped green onions whatever you like so hey I hope you give this recipe a try do me a favor drop me a comment down below of what you'd like to see next I'd love to bear it and also hey if you're on a low carb or keto diet let me know and maybe I'll make some more recipes your comments help me decide what to make next thanks so much for watching
